Quick Watermelon Sorbet

Ingredients
  

  • 3 cups cubed watermelon
  • 1/2 lemon or lime
  • 2 tbs honey or simple syrup (Optional, for extra sweetness)
  • 1/3 cup yogurt (Optional, for extra creaminess)

Instructions
 

  • Freeze the watermelon cubes. They're great to throw in the freezer a few days ahead of time, just to have ready for whenever you have a craving.
  • Transfer the watermelon to a food processor and pulse to begin to break down. Squeeze in the lemon (as well as the optional honey or yogurt, if desired), then continue to process. Serve immediately when fully incorporated.

Notes

Leftovers can be returned to the freezer, but they should be stirred or scraped every hour or so to prevent them from freezing into a solid block. Otherwise, put leftovers into ice cube trays for easy blending.
For an adult slush, add the frozen watermelon chunks to a blender with your favorite spirit.
