Pork Chops with South Carolina Style Mustard BBQ Sauce

This mustard-based BBQ sauce balances a vinegary tang with honey and brown sugar, adds heat with hot sauce, and is so delectable, it makes pork chops sing.

Ingredients
  

Pork Chops and Rub

  • 4 pork chops, an inch or inch and a half thick (Find rib chops if you can get them. They are excellent on the grill)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper, to taste

South Carolina Mustard BBQ Sauce

  • 1 cup yellow mustard
  • 1/4 cup brown sugar
  • 1/4 cup honey
  • 1/2 cup apple cider vinegar
  • 1 tbs ketchup
  • 1 tbs Worcestershire sauce
  • 2 tsp garlic powder
  • 1 tsp hot sauce
  • Salt and pepper, to taste

Instructions
 

South Carolina Mustard BBQ Sauce

  • If desired, make the BBQ sauce a day or two ahead of time. That'll give the flavors more of a chance to meld.
  • Whisk together all BBQ sauce ingredients. Cover and refrigerate until ready to use.

Pork Chops and Rub

  • Mix together the dry spices, then sprinkle over the pork chops.
  • Heat a grill to medium-high (or put them over the hotter side of the grill), then add the chops. Cover and cook for 2 minutes. Flip and cook another minute.
  • Reduce the heat to medium-low, or transfer them to the cooler side of the grill. Mop on some of the barbecue sauce, flipping and mopping more as desired. Grill a few more minutes until they reach an internal temperature of 145 F.
  • Remove chops from the heat and let rest a few minutes before slicing. Serve warm with a side of extra sauce.
