Mint Julep Jello Shots

Saddle up! These Mint Julep Jello Shots are perfect for a picnic or a day out in the country riding some horses. Or better yet, straight from the mold in the fridge.

Ingredients
  

  • 1 cup water
  • 2 packages unflavored gelatin
  • 1/2 cup fresh mint leaves
  • 1/2 cup sugar
  • 1/2 cup bourbon
  • ice cube tray

Instructions
 

  • In a small saucepan add the water. Sprinkle in the gelatin and let soften, about 5 minutes. Stir in the mint leaves and sugar and cook on medium-low, until sugar and gelatin are dissolved, about 5-6 minutes. Do not bring the mixture to a boil.
  • Strain the mixture through a fine-mesh strainer and press a spoon to the mint leaves to extract all of the essential oils. Stir in the bourbon and let sit 10 minutes for the gelatin to start to thicken.
  • Meanwhile place one small mint leaf in each ice cube tray mold and cover with the mixture. Let chill until set, about 4 hours or overnight.
  • Gently remove the jello by using the handle of a spoon to disengage the jello from the mold. Serve.

Notes

Serve these jello shots upside down to make a half dome.
You can always use plastic jello shot cups but we love the appearance of these molded jellos shots.
