Loaded Baked Potatoes with Bacon and Sour Cream

These potatoes are almost a meal in themselves! Make up a batch of these Loaded Baked Potatoes with Bacon and Sour Cream!

Ingredients
  

  • 4 russet potatoes
  • 1/4 cup butter
  • 1/4 cup sour cream
  • 4 slices crispy bacon, crumbled
  • salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 Tbsp chopped chives
  • sour cream to serve.

Instructions
 

  • Preheat oven to 400ºF and prick potatoes with a fork. Cover the potatoes tightly with foil and bake until soft, about 1 hour.
  • Remove from oven and cut the top off the potato and scoop potato flesh out. Place in a bowl and mix with the butter, sour cream, bacon, and salt and pepper. Spoon the filling back into the potato and top with the cheese. Place into the oven and cook until cheese is melted, about 10 minutes. Remove from oven and serve with sour cream and chives.

Make a double batch of these for your next party!
