Homemade Biscuits and Gravy

Made using substitute ingredients like milk and lemon for buttermilk and a mix of spices with ground pork for breakfast sausage, this recipe is the one breakfast you really ever need.

Ingredients
  

For The Biscuits

  • 1 cup milk
  • 1 Tbsp lemon juice
  • 2 cups all-purpose flour
  • 1/4 tsp baking soda
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 6 Tbsp cold butter, cubed

For The Sausage Gravy

  • 1 lb ground pork
  • 2 tsp brown sugar
  • 1 tsp dried sage
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground cloves
  • pinch red pepper flakes
  • 1 Tbsp Vegetable oil
  • 1/4 cup flour
  • 2 cups milk
  • Salt and pepper, to taste

Instructions
 

For The Biscuits

  • Preheat your oven to 450ºF.
  • In a small bowl or liquid measuring cup combine the milk and lemon juice and let sit 6-8 minutes.
  • In a large bowl combine the flour, baking soda, baking powder and salt. Whisk to combine. Cut in the butter either with your hands or a pastry blender until it looks like coarse meal.
  • Pour in the milk mixture and mix until just combined. Transfer to a floured surface and pat into a dough 1/2 inch thick. There's no need to use a rolling pin here. Fold the dough about 4 times and press into 1 inch thick. Using a juice glass or biscuit cutter cut the biscuits into rounds and place on a cookie sheet. Press the scraps together and cut, making sure not to knead.
  • Place in the oven and bake until light golden brown, about 10-12 minutes. Remove from oven and let cool.

For The Sausage Gravy

  • In a large bowl combine the ground pork, brown sugar, dried sage, salt, pepper, ground cloves and red pepper flakes. Heat the oil in a skillet over medium-high and add in the pork mixture. Cook until no longer pink. Add in the flour and cook until flour begins to stick to the bottom of the pan, about 2-3 minutes. Slowly whisk in the milk, stirring until the mixture boils. Continue whisking until mixture thickens and remove from heat.
  • Split a biscuit in half and pour the sausage gravy over the biscuit. Serve.

Notes

These biscuits and gravy go perfectly with fried eggs and hash browns.
You can always substitute buttermilk and breakfast sausage in this recipe.
