Grilled Chicken Wings with Alabama White Sauce

This Northern Alabama BBQ staple is tangy, creamy, and slightly spicy mayo-based sauce is quick to whip up and excellent on chicken wings.

Ingredients
  

Dry Rub

  • 24 chicken wings
  • 3 tbs olive or grapeseed oil
  • 2 tbs chili powder
  • 2 tbs paprika
  • 1 tbs garlic powder
  • 1 tsp cayenne
  • 1 tsp salt
  • 1 tsp pepper
  • 1/4 tsp cumin

Alabama White BBQ Sauce

  • 2 cups mayonnaise
  • 1 cup white vinegar
  • 1 tbs sugar (Add an extra tbs if you've got a sweet tooth)
  • 1 tbs freshly squeezed lemon juice
  • Salt, Pepper, and Cayenne, to taste

Instructions
 

  • In a medium mixing bowl, whisk together the mayonnaise, white vinegar, sugar, lemon juice, as well as pinches of salt, pepper, and cayenne. Set aside while preparing everything else.
  • Combine the dry spices in a small bowl. In a large mixing bowl, rub the chicken with the olive oil. Sprinkle the spice blend over the chicken to coat.
  • Grill over medium-high heat until cooked through, about 18 minutes. Flip once about half way through, but keep an eye on them. You may need to flip them again towards the end to prevent charring.
  • Now here you've got lots of options. You can toss the cooked wings in the sauce to give them a nice, flavorful coating. You could also drizzle the sauce over them. Or leave it up to everyone to do as they like by serving the wings with a big bowl of sauce on the side.
