How to Make Your Own Jerk Seasoning + 5 Recipes to Put It to Use

Jerk seasoning is home to Jamaica with original roots going as far back as West Africa. Jerk is known to be spicy and the flavor definitely packs a punch. I combined my cooking knowledge and a little internet research to bring you the very best jerk seasoning rub. This seasoning can be used on chicken, steak, pork, seafood, and tofu.

With chicken being the common use, I suggest you start there. The scotch bonnet pepper is the key to the spice of jerk seasoning – the more scotch bonnet peppers you use, the more heat your seasoning will cary.

If you are wondering what a scotch bonnet pepper is, just ask for habanero peppers at your local grocer. If that’s too much spice for you then use jalapeños, dried cayenne pepper, or red pepper flakes.

Jerk Seasoning

  • 2 teaspoons onion powder
  • 1 teaspoon paprika
  • 2 teaspoons dried thyme
  • 1/4 cup green onions
  • 1/4 cup fresh ginger
  • scotch bonnet pepper (to taste)
  • 1 tablespoon garlic powder
  • 2 teaspoons dried parsley
  • 1/2 teaspoon black pepper
  • 2 teaspoons salt
  • 2 teaspoons sugar
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 teaspoons ground allspice

To make a wet marinade, add 1 teaspoon of olive oil or vinegar at a time until it reaches the consistency you prefer.

Store in a mason jar or in a container with a tight seal.
