In a large container whisk together the buttermilk, garlic powder, garlic salt, and ground black pepper. Add 8 pieces of bone-in chicken and cover, refrigerating overnight.

The next day pour 4-inches of vegetable oil into a heavy pot and heat over medium-high heat to 350°F.

Meanwhile, dredge the chicken in the eggs, then all-purpose flour. Fry in batches when the oil is hot.

Serve with the poppy seed jam which includes honey, poppy seeds, orange zest, lemon zest, and dark brown sugar.
