In Defense of Egg Salad + 4 Recipes You Should Try

Egg salad is one of those sandwiches that makes you think of school lunches and the 1970s. It’s almost as if this particular dish was somehow stuck in a time warp where, although it is remembered fondly, will likely never be resurrected to accompany any dish at your dinner table. However, the time has come to change this misconception.

Egg salad is not the gummy, flavorless dish that you believe it to be. In fact, it is a sandwich filling whose origins date back to the Romans. And with good reason – creamy, herby eggs are delicious! It is only when this humble food lost its delicacy status that it devolved into the spiritless sandwich that we are familiar with today.

Back in the day, spiced, stuffed eggs were considered to be quite the ornamental dish at any feast. As early as the 13th century, there were recipes for stuffed eggs where the yolk was mashed with spices, herbs, and vinegar. This un-chopped-up ancestor of the egg salad existed for hundreds of years, and it wasn’t until in the late 18th century that the eggs began to be diced into a “salad.” Unsurprisingly, this change in form coincided with the advent of mayonnaise, which was used to bind the chopped pieces of egg together into a creamy consistency.

The advent of this particular combination is often attributed to the French. The British name for egg salad is egg mayonnaise, which is a direct translation of the French “oeufs mayonnaise.” While this name can be a bit misleading to Americans, it clearly shows the migration of this dish from French haute cuisine to the humble American diner.

So now that you know a bit about the long history of egg salad, it’s time to give this dish its due. How can you honor its story?
