Ingredients
  

  • 2 lb extra sharp cheddar cheese, grated
  • 1 cup cream cheese
  • 1 shallot, diced
  • 2 garlic cloves, minced
  • 1 tsp hot pepper sauce
  • 1/4 tsp chili powder
  • 1/2 cup pilsner-style beer

Instructions
 

  • In a medium bowl with an electric mixer, beat together cheddar cheese, cream cheese, shallot, garlic, hot pepper sauce, and chili powder until blended. Gradually add in beer, beating after each addition. Season with salt and pepper and chill for at least 2 hours.
  • Serve with crackers or chips.

Notes

Make your own beer-cheese grilled cheese by adding this to a buttered piece of bread and toasting it in a pan.
Garnish with a bit of sliced peppers for a kick of spice.
